Authentic flavors, rooted in Tuscan tradition

A recipe inspired by Florence’s gastronomic culture, prepared with care, balance, and respect for the local area.

Coccoli con Stracchino e Prosciutto Crudo is one of the most convivial and recognizable starters in Florentine tradition. Its appeal comes from the contrast between warm, airy fried dough, the soft creaminess of stracchino, and the savory elegance of prosciutto. It is a dish that combines simplicity, generosity, and immediate pleasure, making it perfect for sharing at the table. In our restaurant, it represents an authentic beginning to the meal and a delicious way to experience Tuscan flavor through texture, balance, and quality ingredients.
